Hello,
I'm trying to model the air flow pattern around a wind turbine using ANSYS Fluent. Can anybody list out a few tutorials for beginners in this regard ?

It depends.
If you want to study the aerodynamic properties of the blade, you could use the MOVING FRAME technique.
To study the wind turbine wake, you could replace the turbine array by PRESSURE JUMP or POROUS MEDIA.
If you want to study the details of the near wake of a turbine, you probably need to use the SLIDING MESH. It is time consuming because you need to do transient analysis for a long time ( several turbine rotation periods). You need a solid answer for "why should I do it" before you start this one.

You can study this tutorial in ANSYS FLUENT:
Using Moving Reference Frames and Sliding Meshes

This example have two strategies:
Part 1: steady-state solver, defining the motion using Moving Reference Frames (MRF)
Part 2: transient manner, moving the mesh using Sliding Meshes

Which of these methods would be more appropriate or closely match the idea of simulating the air flow pattern ?

Wind tunnel experiments more or less lay emphasis on near wake pattern. When they talk about flow pattern, most of the time they are describing tip/root vortex. Wind resource assessment on the other hand always concerns about the mutual influences of wake on wind turbine array. Flow pattern in this regard means wake expansion, wake mixing, wake merging, etc.
