I want to model a flow of compressible fluid in the tube with Mach number 1.1
Which one of the viscous model should I choose?
What specific settings should I do?

All the models are valid for compressible flow to some degree. Which model you should use will depend on what type of flow problem you have. Some of them will be obvious, i.e. inviscid vs laminar vs turbulent. I think you should start with figuring out which of these 3 you have.
