Far too often people jump into CFD, obtain pretty images, and take the results as gospel.

Crack open a notepad and pen, and write down an energy and mass balance instead. It will give you approximate rates of evaporation in a fraction of the time it's going take to set up a complex Fluent phase change simulation. And if you do successfully set up a Fluent phase change simulation, the evaporation rates should be the same as the calculation you've done in a notepad.
