is there anybody who could tell me where can i select RANS or LES method in fluent exactly?

The turbulence models can be chosen from Models > Viscous > Edit... The default is laminar and this option can be changed to RANS (including k-e and k-w models) or LES amongst others. Have a read of the modelling turbulence chapter in the users guide for details on each model as well as their advantages and limitations.
