Can anyone will help me to understand the terms and their proper use of the options of the attached file. i want to run a heat exchanger simulation where hot water is flowing inside a pipe that contains some fin plate

Use default setting. If you get unrealistic results you should read ANSYS manual and choose model that fit your case. Usually there is no need to modify model constants.
