Cell zone conditions is where you set options related to the volume/zones. For simpler models you probably never have to touch these. But if you have multiple volumes with different materials and slightly different models in each (i.e. solid regions and fluid regions) then this is where you would set them.
The interior surface is the collection of interior cell faces. You probably also never have to touch this because usually you have BC's only at domain boundaries and not on the cell faces inside your domain. |

If you have water and air in this zone then you pick mixture.
This is again a multiple zone option. Sometimes you have another region/zone where there is only air or only water and you don't want to solve vof in this zone because it would be a waste. |
