Questions on Meshing and Initialization for k-ω SST Autoclave Simulation

Hello,
I have a few questions regarding the meshing methodology for the k-ω SST model. I’m currently running a 3D CFD simulation of an autoclave, and I’d like to obtain accurate HTC values on the surfaces of the calorimeter located in the fluid zone (boxes above the front, mid, and rear positions). Now I have some questions,
1. Is it acceptable to apply inflation layers only around the calorimeter, or should I also include inflation near the autoclave walls and the central table (which blocks airflow between the lower and upper regions)? I would like to know especially on door (the left rounded side where the fluid from inlet reverses direction toward the outlet)
2. During initialization, is it fine to initialize the flow from the inlet, or should I specify the initial velocity in the opposite direction of inlet (from left to right side), since most of the air will actually move toward the outlet side?
3. Is it normal that my HTC values fluctuate instead of converging to a single value, even though all boundary conditions are steady (neither periodic nor time-dependent)?
