Can anyone tell me if FLUENT will iterate faster when run in a command shell as opposed to GUI mode, and will FLUENT run a bit faster still when run in 'background execution'?

U can display the residuals at 10, 20 30 intervals. Depending on the problem size, you should be benefited with shell.
