First you've to mesh all the control volume, included the air region. Work better with a structured mesh far from ship, and an unstructured, with boundary layer, near wall. You have 2 separated inflow, air and water. Then you have to inzialize all the volume with the ship speed, and to specify the hydrostatic profile of pressure for the water volume, and the turbulence level at inflow. The free surface is defined by means of VOF method, then to patch it. The better turbulence method for your problem is k-w SST, try also k-epsilon Realizable. Pay attention to the mesh near walls, and y-plus. See also Marnet Best Practice Guidelines, and Ercoftac.
