Default axial flow around a cylinder -heat transfer model?

Hi!

I am to model the axial flow around a cylinder (air, incompressible, steady, high turbulent flow). The cylinder is hot so there is a heat transfer to the fluid. Now I have some questions:

What is the best turbulence model? How to choose grid size ant type at the boundary layer? should I use a wall function???

I want to compare it to experimental values, but it is very hard to find any appropiate reference for AXIAL flow... any sugestion???
