Does anybody know if I can run fluent without cortex?

Yes you can. From a DOS window (or terminal window), type:

fluent 3d -g

for single precision 3D. You have to make sure the fluent installation directory is in your path (If you don't know how to do this - google it).

Actually, there are many more options you can specify, type:

fluent -help

to get them all.

Cortex still runs when you start fluent with -g, it just uses the text UI rather than the graphical UI.

Which may be exactly what the original poster wanted.

If the cortex process dies or is killed, the fluent process dies too (at least that is the way it used to work...).

Yes. Correct. The cortex still runs with -g. I dont want cortex to be running at all but just the solver processes.
