Need some tips to model heat transfer

Hello everyone,
I'm trying to get the hang of fluent and at the moment I am trying to model a pan on a gas stove flame. I'm starting out simple, going for a steady state solution meaning the pan temperature is fixed at 100 degrees C (boiling water). This pan is placed above a gas flame of about 1200 degrees C (just hot air, instead of considering reactions). First I want to get a realistic solution without considering turbulence and radiation. But I'm already running into some questions that I was hoping you might be able to help me answer. My estimate for the velocity of the gas flame is that it should be about 1m/s. However when I use this value, the solution doesn't look very realistic, the hot air is very localized (see first picture). I get a more realistic solution when I use 5 - 10 m/s for the inlet flame velocity (second picture), however I wouldn't know how I could justify using this value. Anyone have any tips what I could try to get a realistic solution with 1m/s? Also any tips for turbulence and radiation are welcome (for when I get to that). Thanks! Chris p.s.
