This book is a pretty good reference.

Here:

under "Papers" you can find the Ph.D thesis of Hrvoe Jasak, which is one of the creators of OpenFoam. It is not a Fluent reference but, as Ph.D. thesis on an unstructured CFD solver, it has a lot of useful descriptions. You should compare this material with that in the Fluent manual and the fluent reference papers and you'll probably have a clear understanding of the fluent implementation.
