how to plot vs time
 

Good evening, I made a simulation using FLUENT 6.3.26, but in the unsteady regim how to draw the velocity vs. time,v(t) and u(t)

First, you should define a monitoring point or surface (Surface>>point or Iso-surface...).
Then, you can monitor the U(t) or V(t) of this point or surface in the iteration process as you need.(Sovle>>Monitor>>Surface...)
