Default Conservative form of N-S equation for incompressible flow and sharp interface

I have some questions. I am learning CFD.

I heard that in single-phase flow, non-conservative form of N-S equations gives inaccurate results. Could you explain why?

I heard that in two-phase flow with sharp interface, conservative form of N-S equations won't work due to numerical instability near interface. is the instability caused by ill-posedness of matrix in Poisson equation? Could you explain in detail?

If conservative form of N-S equation does not work in two-phase flow with sharp interface, then is it possible to mix conservative and non-conservative form of N-S equations in a way that conservative form deals with deep flow and non-conservative form deals with near sharp interface? If possible, could you show me some literatures?
