DNS
 
From my limited understanding of DNS, it simulates turbulence without an modellig. Does this mean that there is only 'one version' of DNS?

Well regarding versions there are many versions depending on if you want to perform your computation in spatial domain or wavenumber domain after taking a fourier transform. There are also cases where fourier transform is used along a plane and spatial solution is used in the third direction. Regarding the first part of the question it does not distinguish between laminar or turbulent flow except in the the spatial resolution.
