Estimation of order of accuracy

I would like to know how to estimate the order of accuracy of cfd solution using random 2d unstructured mesh ( with most of the elements are highly skewed)
I know that defined procedure exists for estimating the same on regular (structured mesh)
Any references , links highly appreciated

Thanks

This is an interesting issue, the convergence slope should be obtained by considering that the ratio between the max and min of the edges has to vanish for successive refined grid.

Some comments can be found for example in the book of Peric & Ferziger
