If you are new in this area then 'Transport Phenomena' by Bird, Stewart and Lightfoot is a good book to begin with and it is also widely available. If you want to get into a little more details then any book on 'Non-Newtonian Fluids' or 'Rheology' will do the job. 'Dynamics of Polymeric liquids' by Bird and Hassegar is also an excellent text book in this regard.
