Adjusting Reynolds number

I am modelling flow past an aerofoil and investigating a range of Reynolds number. I am adjusting the viscosity and density to change this. In the past I have changed the velocity. I know technically it shouldn't make a difference but what is the "correct" method.. I suppose recreating a realistic fluid like water / air with the density / viscosity would make sence, but what if you have no ideas.. discuss!?

I always prefer to work in non-dimensional units. In that case, you can simply set the Reynolds number to whatever value you want.
