I'm thinking of purchasing an Intel Core 2 Duo machine, and I'd like to know if there are any issues running OpenFOAM on this architecture, as well as the most straightforward linux distro to use.

Yup, I am developing on an Intel CoreDuo and the performance is quite good. If you run 2-way parallel it's even better.
My Linux distro is SuSe 10.1 and foam-wise it works fine. There are some minor glitches on my laptop but overall it's very usable. I am about to try CoreDuo-specific ompiler options on Intel-9.1 compiler. Having in mind the performance is already pretty hot, don't expect huge differences. Enjoy, Hrv
