Is there a way by which I can allow only the cell shapes already defined in OpenFOAM to be produced by refineMesh? i.e tet, pyramid, prism, tetWedge, wedge and hexahedral

I'm refining a set of hexes and it seems to produce the following kind of cells

10 vertices with 6 faces
9 vertices with 6 faces
13 vertices with 9 faces

Have you tried to use the entry useHexTopology yes; within you refineMeshDict? See https://openfoamwiki.net/index.php/RefineMesh.
