Getting data from an unstructured mesh interpolated on a uniform, cartesian grid

Hello all,

I have an unstructured mesh I created with gmsh for a 2D flow past a cylinder. However, I want to save data on a uniform, Cartesian grid. I am not sure how to project the unstructured data onto a uniform grid in the best way. So far, I have tried Paraview's filters > point interpolation > point plane interpolator, I thought I did this correctly, but it is giving me weird flickering results.

I also want to save the uniform data at each iteration afterwards, and I am looking for a way to do that recursively.

Thank you.
