plotting temperature versus time graph

I have run unsteady flow in evacuated tubes. I got results that I think are good. I now have problems with post processing. I want to plot a graph that show how temperature changes with time. Can someone tell me how can I do it.
The other problem is that I am failing to explain the flow which according to literature is good. I have bifilamental flow near the tube orifice and annular flow in some few parts of the tube. I can explain the cause of bifilamental flow but cannot explain annular flow. Please can someone give me the explanation or a reading reference that can help solve my problem.

Thank you
