results on a graph

Hello all,

I am a beginner on openFoam and I have a Wind tunnel to modelize. After the simulation I'd like to have some graph with the results but not a common graph with just what happen to the velocity depending on the height and length (the kind of think you can Watch on paraView), actually I'd like to add the angle (my Wind come into my Wind tunnel with different angles) instead of the height. How can I do this?
I enclosed a little draw to illustrate what I mean (the colors are not representative, this is just an to better understand).

Could anyone help me?

ps: I am sorry if I piss you all off with my large amount of post but as I am a beginner I need some help, once I understand I promise I won't annoy you more.
