If I were to set up all of the files in {0/,constant/,system/} as binary files, is the header just plain ascii text?

Hi,

You can check format of binary files by setting writeFormat to binary in cavity tutorial case and running the case.

Answering your question: yes, header is in ASCII, just fields are saved as binary chunks of the file.
