Boundary conditions for water depth

Hi there,
I'm trying to model a boundary condition, where the water column height changes based on a time series. So it would only be a phase change in height, not a change in velocity or pressure. The idea is that the increased water level will force water to flow onto a surface with different depressions and pool in lower areas. All based on gravity.

My time series is fairly simple:
01/01/2011 00:00:00 9.7 m
01/01/2011 00:05:00 9.7 m
01/01/2011 01:00:00 10.35 m
01/01/2011 11:00:00 10.35 m
01/01/2011 12:00:00 9.7 m
01/01/2011 20:00:00 9.7 m

Does anyone know how I can achieve this? I'm using a rectangular prism geometry right now to represent the water at the initial level.

All times are GMT -4. The time now is 05:23.
