How is interpolation working with overset ?

Dear Foamers,

I come today with a new challenge, and once again I need your expertise ^^"

I am trying to induce a very specific motion to two blades.
I almost reached a physical behaviour BUT... while post-processing my results, I saw a real problem :

OpenFoam seems interpolating the meshes at 2 different positions. I used the Wolfdynamics tutorial as initial file but they seem to have the same problem !
In their documentation they explain that the cellType represents the way the solver is handeling the calculation in the cell. Red is the solid zone, blue is basicaly the calculated and grey is interpolated as shown on this picture :

My problem is OpenFoam is interpolating 1) around the hole made by the blade 2) at the overset frontier...

Thus I have three questions :

1) As I understand it the interpolation at the boundary is only used to pass the informations from the background to the overset. And the interpolation close to the blade is used to send informations from the overset to the background. Is it like that ?
2) Wouldn't be better to have the 2 interpolations at same place ? Can I have an impact of this interpolation area ?
3) Is my simulation suitable like this ? What would be the best way to improve it ?

The values of cellID are ok :

If I plan to do a mesh convergence study on this kind of mesh how should I proceed ? Is refinement of the overset enough or should I expend it to the whole domain ? Is there a procedure for that ?
