Completely new to CFD software, what are some good resources?

I'm still an undergraduate student however I'm interested in learning about CFD. Currently I am working on a project involving airflow over a complex 3-Dimensional object and am interested in running a CFD simulation in openFOAM to calculate some properties. I have figured out how to create the mesh in gmsh and (think) I know how to use the exported mesh with openFOAM, however I am clueless when it comes to building the files for the simulation. What are some good documents for an end-user who is just starting off in CFD? I've looked at a few of the tutorials but they don't seem to explain where they are getting their values from.

Thanks in advance.
