Freeze Drying solver and case

i want to make a freeze drying solver and case.in a freeze drying i want to simulate a sublimation process under vacuum and low pressure for a solid food such as a sliced apple.in this process i want to simulate sublimation of water in a apple slices to make a dried apple slice.how i can solve this problem?which solver an which case is useable for this case?
