Running a high Re low mach rhoPimpleFoam

Hello everyone!
I am a long time reader, first time poster. I am trying to run a rhoPimpleFoam for a steady state high reynolds number low mach airfoil but running into a supersonic flow solution. Here are the pertinent simulation parameters

I've attached as many of the files as possible to this string to help. I used gmsh for the mesh generation and those files are included as well to generate a full mesh which, after generating and saving the mesh in gmsh, can be converted using gmshToFoam <file_name.msh>. I considered running a normalized chord (1 meter) in water at 107.404m/s. The issue being this will be part of a series of test to generate CL/CD/CM plots up to the trans-sonic regime so I would like to capture those effects. The following information is what I calculated for the inflation layers. The grid is a C-H grid. I've included an image of the C-H grid, the computations for the inflation layers, and the checkMesh output. The C-H grid has has the following properties.

I think one issue stems from the high aspect ratio mesh cells. I am using GMSH but I can not figure out how to generate an inflation layer and maintain a structured CH mesh. Every topic or example I've seen has been an inflation layer connected to an unstructured mesh. I used this video (slowed down to 25% playback):https://www.youtube.com/watch?v=bekRbU7rtZE as the basis for generating the mesh, except for the wake spacing. I tried using snappyHexMesh earlier in the process but the blender plugin doesnt seem to work on linux for some reason.
