Default how to calculate velocity's second derivative

I was wondering what is the proper and elegant way to compute the second derivative of velocity (d^2 U_i/ dx_k^2), i,k=[1,2,3], a tensor?

Are you interested in laplacian terms...if yes check fvSchemes of any tutorial
