Default Modeling vortex creation past vertical flat wall HELP

I am new to openFoam, got hooked on the program about a month ago.
I'm interested in creating an LES turbulent model to simulate vortex creation behind a vertical flat plate in 3D.

Any suggestions as to which tutorial model I should use in order to alter the mesh, study the characteristics, and/or modify turbulent model??

Any help is much appreciated
