Can anyone tell me exactly what the difference is between a cellSet and a cellZone?

cellZone is used for identifying regions for moving reference frame simulations (at least that is what I have used it for). Take a look at the tutorials for MRFinterFoam. cellSets cannot be used in this way although you could use a dictionary to select a cellSet and then convert it to a cellZone using setsToZones (as in the mixerVessel2D tutorial--look at the makeMesh script).

Certainly not an exhaustive answer, but hopefully it is helpful.
