I cannot think of a way of doing this all in CFD-Post. I would export the data from your cylindrical surface and plot it using an external package, like matlab, excel (if you must), python, tecplot...

Do you want to put a flat plane through your domain, or do you want to take the existing cylindrical section and map it to a flat surface? Or something...
