we can see that I don't have inlet temperature

why don't I have in indicial condition temperature?

You have only initial conditions for active physics models. So you need to switch on an energy solver in order to have a temperature initial condition to set.
It doesn't make sense to set anything which isn't solved.

For the case that you see the temperature, you have segregated fluid temperature, so there is a solver for energy. in another case also, if you need to have the temperature you need to have a solver for energy.

You clearly haven't activated the same physics models in both simulations. That's why you've got different things to specify.

There is an energy solver active in the left simulation. Therefore you need to specify the initial temperature and have got the option to do so.
There is no energy solver in the right simulation, therefore you don't have any option to specify the initial temperature.

When you experience any issues, it might be worth to give a little more information about what you're trying to do and what the issue is.
