I've created interfaces but only have physics conditions and physics values available to me, nothing on mesh options. How do I get this node to pop up under interfaces so I can select prism layers?

you should do it on the corresponding boundary

Both regions need to be in the same mesh continuum in order to have mesh conditions available on the interface.
