Temperature Boundary/Initial Conditions

I am studying the behavior of fluids in micro gravity for my masters degree and this is my first foray into CFD. As my research is focusing on fluid behavior in micro gravity surface tension is important for what I am doing which leads me to a couple questions.

1) When using VOF, can I apply different temperatures to the different fluids, i.e. gas and water? For instance similar to how the volume can be specified using a field function?

($$Position[0,1,2]<=,>= (Some Value))?0:1

2) Can I apply a temperature gradient on the surface of the fluid to invoke a surface tension gradient? Since both fluids occupy one region i am not sure if this is possible, and if it is how to go about it.

Any help very much appreciated!
