I have used SU2 6.2.0 Falcon to run turbulent simulations using SA model. The configuration file that I had used does not contain an input "FREESTREAM_TURBULENCEINTENSITY". If the turbulence intensity is not specified in the configuration file, the code may use a default value for the same. If so, what is the default value of turbulence intensity?

It's default value is set to 0.05. You can check config_structure.cpp in Common/src folder.

Yes.
To add further, for external aero usually we take 0.001 or 0.002 type (0.1% or 0.2%) and for internal flow (wt model) depending upon inputs available 0.01 to 0.05 (1% to 5%).
