Is it possible to simulate the vibration of string and make the noise?

If you want to define the motion of the string in advance this can be done using moving mesh inside CFX. If you want the string to include elasticity and these more complex effects you will need to do it by FSI. But both of these methods are possible and will generate pressure waves in the surrounding air.
