I know how to calculate the mass flow rate in "reports"->"fluxes", but there I can get only the final value after the calculation.
I would like to create a graph that shows the mass flow rate at every iteration while the software is performing its calculation, like the residuals one that is shown in automatic.
How can I do that?

Create a surface monitor (in newer versions you have to create a report first).
