Nearest Neighbor Interpolation?

I am solving Euler fluid-structure interactions. Due to non-matching meshes between two, I needed an interpolation technique to exchange interface informations (e.g. fluid pressure to the structure, structural deformation to the fluid for mesh remapping). While surveying literature, I found that this NNI algorithm may be applicable to my purposes. However, I could not find any reference on this methodology. Can anyone recommend me the way to include this way?
