How interFoam tell which phase is wetting or non-wetting ?

Dear all:

Maybe a stupid question.

In interFoam for a given geometry, when we set a case, we give two fluid properties and surface tension in transportProperties, but how interFoam know which fluid is wetting phase and which one is non-wetting phase? When I put surface tension as negative value, time step becomes much shorter and it runs quite slow.

I found it .It is the contact angle that determine which is wetting or non-wetting.
