skew(T) = 0.5*(T - T^t) symm(

skew(T) = 0.5*(T - T^t)
symm(T) = 0.5*(T + T^t)

with T = grad(U)

I think the good definition is :

sr = sqrt(2) * mag(symm(fvc::grad(U)))
