what does sigma mean

I' m new in OpenFOAM 2.10. Recently I finished the case "floatingObject" with the solver interDyMFoam.

what does sigma mean in the file transportProperties? I use kEpsilon model, and the case use default paramaters.

at the same time, if i want to choose stardard kEpsilon model, how to assign related paramaters.
