PisoFoam fvScheme set-up for freestream conditions

I am attempting to run 2D unsteady simulations on vortex shedding behind both a cylinder and short fairings. I am unsure what fvSchemes are required to run both first and second order simulations.
Can someone please talk me through the optimal settings for first order and then what I adjust to initiate second order? I am currently using a CrankNicolson "1" time scheme with a limitedLinearV divScheme which gives a result, but I am unsure if this is a first or second solution?
