Okay, I found a way for myself...

For those who have the same question:
In Tecplot there's an option to read only the residuals from a .dat-file!
Afterwards you can export them to a ASCII file!!...

Whenever I read my Case & Data files in FLUENT, I am able to plot the residuals! So, the data of the residuals should be...
