Default Modelling emulsion in oil-water mixed phase

Hi there... can anyone share theur experience in modelling oil water with emulsion presence modelling.
I am interested in modelling oul-water seperation by droplet formation. Potential presence of emulsion could influence separation efficiency so need modelling too..
Any sharing of experience is tremendously appreciated
