Best way to separate 2 phases from each other?

Hi everybody,
I'm trying to simulate a water-flow inside a channel, with a groove infused with silicon oil. There's a surface tension between the water-oil interface which leads to a specific interface shape, which is what I'd like to discover. The problem is, I'm not entirely sure how to use the VOF model to simulate that. I want the water to enter the channel inlet, and then, somewhere down the line, I want the oil to start, but it shouldn't be spread across the entire bottom length. So, it's not a simple bottom-half filled with oil, upper-half filled with water, and I don't know how to separate between the phases that way. Pictures to visualize what I want to do are given below.
