Valdation of a tunnel blockage using simpleFoam????

Hello Foamers,
I hope that you are all fine. I have been following a project about the implementations of an actuator disk model using simpleFoam around a propeller. I have successfully done all the validations except plotting the velocity distribution for different (R_tun/R_rot). As you can see in the following attachment the validations have been done in different velocities (7, 10, 14 m/s). I only need to do the validation when the velocity 10 m/s, which is the case that has been done by Mikkelsen. I am a little bit confused on how these plots have been done. I have done plot over line of the velocity in the simpleFoam, and it was between either U magnitude or (Ux, Uy, or Uz) with respect to the distance from downstream of the propeller to the point in which the velocity gets stabilized. How can I plot figure 6.5 in the attached document named "validation 1" as well as figure 14 in the file named "validation"? I do not know how this plot is being done.
