I though you have some publication that explains...

I though you have some publication that explains why you expect three phases. This is what I mean by "reference".

As you say: the liquid evaporates. Afterwards it is in the vapor phase and mixes with air. Please give your reference, or it doesn't make sense to discuss this.

You will have a liquid methanol phase and a vapor phase consisting of air and methanol. Do you have a reference that suggests why there should be a third phase?

Have a look in $FOAM_SOLVERS/multiphase, whether you find a 3-phase solver. As I said, I have only used 2-phase solvers.

What is the chemical composition of the liquid?

Is the vapour and the air immiscible? Otherwise you have a 2-phase problem and can use any of the VOF-solvers.
